Rosemary Salmon with Orange Sauce
To prepare the salmon -
Sprinkle Salmon fillet with Sea Salt, Fresh Ground Black Pepper, and Chopped
Fresh Rosemary
Grill or Bake Salmon according to the general directions for cooking fish
on our Cooking page
Orange Sauce -
1 Large White Onion, rough chopped
Olive or Vegetable Oil
4 Cups of Orange Juice (no pulp)
1 Stick Unsalted Butter
1 T Spicey Brown Mustard
1/2 t Chipotle Chile Powder
Saute onion in oil until transparent (do not let it brown). Add
orange juice. Cook down at a low boil until reduced by half (this
may take 20-30 minutes). When reduced by half, strain out onion and
discard. Return orange sauce to pan. Over low heat, add butter,
one tablespoon at a time, whisking vigorously. Then whisk in mustard
and chipotle powder. Add a dash of sea salt if desired.
Serve warm sauce over salmon. This sauce is also good over
chicken and vegetables and in stir fry.
